Broccoli Soup with Roasted Cumin & Peppercorns

Hello there 😊
Meal planning is something I rarely do. I open the fridge, look at the veggies and decide what I am going to cook. I like being spontaneous 😉 To be honest I think it makes me feel more confident about myself when I can do something nice without prepping much. It feels fantastic to challenge myself! Also, during times of uncertainties one cannot expect everything to go according to plans right? So I switch on the enthu mode and get going! Sometimes few veggies are about to go bad and you gotta make sure they aren't wasted (I am a big believer of no/minimum wastage policy) and I plan my meals accordingly. This time it was broccoli's turn🥦 Presenting my last night's dinner 😊

Ingredients:
1 whole broccoli
1 medium onion finely chopped
3-4 garlic cloves finely sliced
2 tbsp butter
1 tsp roasted cumin powder
1/2 tsp roasted black pepper powder
1/2 tsp sugar
2 tbsp fresh cream/milk
2 cups water
Salt as per taste
Method:
Heat the pan and add the butter, add garlic, onion and fry until soft
Add the broccoli florets, salt, water and boil for 10 minutes. Switch off the flame
Once it cools down puree the mixture in a blender
Add the puree to the pan along with sugar, cumin and pepper powder and boil for 5 minutes or until the raw smell goes.
Add fresh cream/milk at the end and mix well. Garnish with cumin powder, coriander and serve with any toasted bread of your choice.
