Kheer Komola / Orange Pudding / Komola Payesh/ ಕಿತ್ತಳೆ ಹಣ್ಣಿನ ಪಾಯಸ 🍊🍶

A very simple and very tasty Bengali dessert. Never thought citrus and milk combo would work so well! I came across this recipe a while ago and wanted to try it ever since. Finally made it! Quarantine is working well for a some of us isn't it? 😉


Ingredients:

500 ml full fat milk

1/2 cup freshly squeezed orange juice

1/2 cup orange pulp (seeds & skin removed)

3-4 strands of saffron

A pinch of cardamom powder

3 pistachios to garnish

Sugar 1 cup (adjust according to your preference)

Method:

-Soak the saffron strands in warm milk for 30 mins.

-Boil the milk in a pan until it reduces to half

-Add saffron, sugar and cardamom powder and boil it for 10 more mins

-Switch off the flame and allow the milk to cool down completely

-Once it cools down add in the orange juice and pulp and mix it gently

-Refrigerate it for an hour, garnish with pistachios and saffron and serve.

Notes:

-The most important part in making this kheer is cooling down the milk

If citrus fruit is added while the milk is hot/warm, it curdles

-It tastes best when chilled or even at room temperature

-You can remove or keep the cream/malai that forms while boiling the milk. I didn't remove it

as it makes the kheer rich in flavour
