Spinach & Garlic Curry Seasoned with Cumin/ Lahasuni Palak with Jeera Tadka

Once my Japanese Sensei (teacher) asked me - 'Are you a vegetarian? Does that mean you eat grass??!!!' I don't know what exactly was my reaction at that time but seeing how my teacher reacted I think I was shocked. Now how do I explain someone what idli, dosa, sambar and upma is who thinks vegetarians eat grass??? I tried explaining but I am not sure if I was very successful! Sadly my sensei is not on instagram otherwise she would have better known the vegetarian world 😊


Here is a curry made from spinach and lots of garlic and it can be eaten with either rice or any kind of flatbread.


Ingredients:

Fresh spinach - 1 bunch

2 tbsp lemon juice

1 tsp cumin/jeera

3-4 green chillies

5 big garlic pods crushed

Salt as per taste

2 tbsp oil


Method:

Wash the spinach and blanch. Puree it coarsely along with green chillies

Heat a pan with oil, add cumin and garlic

Once the garlic turns golden brown, add the spinach puree and salt

Cook for 5 minutes and add lemon juice.

It is ready to serve with any bread or rice
